Sweet potato is without a doubt my favorite thing to cook with. It is so versatile and when done right it’s a great addition to many dishes. This super food is a great source of Vitamin A, vitamin C, manganese, copper, pantothenic acid and vitamin B6, potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus. Cheers to a delicious and healthy meal!

For this specific recipe I’m focusing on how to perfectly roast a sweet potato. This might seem simple, but there’s a method to getting a nice crust on the outside and a soft inside. First preheat the oven to 350. I usually chop one sweet potato up into small cubes if I am cooking for myself*. This is a bit of a process since they aren’t the easiest things to chop, but its worth it in the end. Once cubed, throw the sweet potatoes in a mixing bowl to season. This might be different every time or you may just opt for the classic trio of olive oil, salt, and pepper; either way drizzle just enough olive oil to lightly cover the pieces of potato. Hit it with a little salt and pepper to taste, and then if you want a little kick, toss in a pinch of red pepper flakes.

*For French fries the process of baking is the same, just cut the sweet potato into longer strands.

Spread the mix onto a baking sheet lined with tin foil and place into the preheated oven. The trick to get the crisp is to gradually bring up the temperature. Every 10 minutes or so I will add another 25 degrees on, ending with the oven between 400-425 degrees. Every time you add more heat, be sure to use a wooden spoon move the potatoes around for an even roast. This usually takes me about 25-30 minutes. Once they are done, and that is up to your own discretion, take them out of the oven and let sit for a few minutes to cool. Then you can add them to any dish you want. I’ve made vegetarian tacos, Buddha bowls, salads, and many more dishes with this addition. The one thing to do after that is enjoy your meal and bask in the beta-carotene!
